Chicken Fajitas

Today, I have a very simple and easy to make recipe for Chicken Fajitas. My husband is a beef-eater and usually we have Beef Fajitas, but every once in a while I like a change. I hope you enjoy this one.

We're celebrating Memorial Day today with a family cookout at our house. Be safe this holiday weekend and please remember those who have given their lives for our country. The holiday is really about honoring them.

CHICKEN FAJITAS

3 T. vegetable oil
6 - 6-oz. skinless, boneless chicken breast halves, thinly sliced
1/2 c. sliced onions
1/2 c. sliced red bell pepper
1/2 c. tomato juice
2 T. taco seasoning mix
1 cup salsa
8 - 1/2-inch thick slices French bread
2 c. shredded Cheddar cheese

Heat the oil in a large skillet over medium-high heat. Add the chicken and cook and stir until lightly browned, about 5 minutes.

Add in the sliced onions and red peppers. Cook and stir for more 5 minutes or until the vegetables are tender.

Stir in the tomato juice and taco seasoning, mixing well. Cook mixture until the juice has thickened and the chicken is well coated with sauce, probably an additional 7 minutes.

Preheat the oven's broiler and set the oven rack about 6-inches from the heat source.

Spread 2 tablespoons of salsa over each slice of French bread. Evenly spoon the chicken mixture on top of the salsa-topped bread. Sprinkle each sandwich with 1/4 c. Cheddar cheese.

Place sandwiches under the preheated broiler and cook for 5 minutes or until the cheese is melted and beginning to brown.

Oh, YUM!! I love chicken fajitas. Just had a flashback to when the kids were little and would jive around the house chanting, "Chicken faJItas, bo-bo-burRItas...." :D
